I have seen some users submit field with just spaces (space bar) for required fields. How can form maker detect that there actually needs to be text in some fields?

Unfortunately since the space character itself is indicated as text, Form Maker extension cannot detect whether or not there were actual letters or numbers typed for form fields.

You can perhaps add a notice for your users not to do so. But in case this happens too often, probably the best way would be to check the values with Javascript. Although this code might take a lot of efforts and time.
