Just getting local volunteer group to log their fitness levels into a form and want to download as Excel is this possible?

You can download it as a CSV file, which can be opened in Excel.

How does one do that?

When you go to subscriptions section and choose your form from the dropdown list, after it loads the subscriptions you'll see 2 buttons at the upper right corner named Export to CSV XML.
