How to I get the submissions emails to administrator to show up from a name, not an email address. If I delete the email address, the program puts in a wordpress email. I have chosen the Name field under name but when I receive the email in my inbox it is listed with an email address, not the submitters name.

You should set the name in "From Name" field for administrator email. There is a + button which will help you to set the value of which field it should take as a Name.
